Kisses and Cake




Happy Monday!

Good morning, my loved ones.  :-)

How did you sleep?  I slept well - even stayed asleep for an extra hour, which is great; I must have needed it!  

What did you have for breakfast this morning?  Last night, I whipped up some Fruity Overnight Oats using rolled oats, chia seeds, a tinge of vanilla extract, some soy milk, and a ton of fruit — sliced cherries, strawberries, and blueberries…  I whisked it all together and covered it to go into the refrigerator to thicken, and this morning it was quite the treat!  Very filling, which I love.  The fruit had been mixed together with lemon juice, a tiny sprinkle of sugar, and a small pinch of sea salt the night before when I made a fruit salad of sorts.  I am finding that with this vegan lifestyle, I am able to use food in all sorts of ways.  What I had for dinner may make a great lunch somehow, or vice versa.  What I have for “dessert” may make a great breakfast.  I love that.  I am finding that I really don’t waste food like I used to.  How awesome is that?

So what are you up to today?  Are you going into work?  Working from home?  I’m heading into work in a bit and then when I come home, it’s time to crack down and work on some wedding planning.  Over the weekend I took a break — I needed it.  But today, it’s back to business and I am looking forward to hunkering down and getting things done.  :-)  And, of course, you know me — I’ll be blogging about my progress all along the way.
