Recipes For Starting a New Job…

These are some excellent comfort-food recipes from my kitchen, for when your life seems totally jumbled and you have tons going on…  Just the smells that these foods create are enough to get you to settle down on the couch with the love of your life by your side.

Beefy Pasta Skillet  (Yield: 4 servings)

For a quick, delicious dinner after your first day at work, this recipe works wonders.  Send it with your fiance for lunch the following day so he gets a little taste of home.

Ingredients:

1 pound ground beef

1 medium onion, chopped (about 1/2 cup)

1 10 3/4-oz can Campbells Condensed Tomato Soup

1/4 cup cold water

1 tablespoons Worcestershire sauce

1/2 cup shredded cheddar cheese

1 1/2 cups corkscrew-shaped pasta, cooked and drained

Directions:

1.  Cook the beef and onion in a 10-inch skillet over medium-high heat until the beef is well browned, stirring often to separate meat. Pour off any fat.

2.  Stir the soup, water, Worcestershire, cheese and pasta in the skillet and cook until the mixture is hot and bubbling.

Sour Cream Banana Muffins  (Yield: 12 regular-sized muffins)

This recipe comes from my mother-in-law’s kitchen, only her recipe is for a loaf of this scrumptious bread.  Make this recipe with love, because there really are only two ways to bake — out of love, or out of frustration.  But if you make this recipe with love, I promise, those who eat it will taste it.

Ingredients:

1/2 cup butter

1 cup sugar

2 eggs

1 teaspoon vanilla

1 1/2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 cup mashed banana

1/2 cup nuts (optional)

1/2 cup sour cream

Directions:

1.  Cream the butter with the sugar.  Add the eggs and vanilla.  Add the dry ingredients; mix.  Add the mashed bananas, nuts and sour cream.

2.  Line a muffin tin with 12 liners, and fill liners with batter, 3/4 of the way full.  Bake at 350 degrees for 20 minutes.  Muffins are done when a cake tester inserted into the center comes out clean.

Lemon Burst Cake Mix Cookies  (Yield: More than enough to share.)

I found this recipe on www.tidymom.net.  It is a true keeper — simple to make, yet luxuriously lemony and delicious.  Take these to your next family gathering or make them for one of your best friends.  Whatever the occasion, they are sure to bring warmth to the heart.

Ingredients:

1 box Lemon Cake Mix

1 8-oz container Cool Whip

1 egg

1/3 cup powdered sugar (for rolling)

Directions:

1.  Preheat oven to 350 degrees.

2.  In medium bowl, beat cool whip, egg and cake mix until well blended. Dough will be thick and sticky.

3.  Drop by teaspoonfuls into a bowl of powdered sugar and roll to coat.

4.  Place on parchment lined cookie sheet and bake for 10- 12  minutes.
