Healthy Tacos
So, I made these tacos on New Year’s Eve this past year, and my brother and Grey devoured just about everything I set out for them in one sitting. They loved these tacos! And with the addition of ground turkey instead of ground beef, they are a great investment.
When I made them for a group of people, I found the whole meal to be super easy — mostly because once everything is done and in their serving dishes, it’s easy to just set things up nicely and let people have at it. You don’t have to babysit anything, and that I love. These could be great for parties or small get-togethers. One thing that I did is set up all of the toppings in their proper bowls quite a while before I started actually cooking the dinner. I covered the bowls with plastic wrap and stuck them in the refrigerator until I was ready to set the table — easy peasy!
I will warn you, though: If you’re like me and set everything out before you start cooking (i.e. different serving bowls for all toppings; different ramekins for every ingredient that I have pre-measured), there are a lot of dishes. But for me, I don’t mind a lot of dishes or hefty kitchen clean-up because, well, 1. I just like doing that, and 2. It’s easier for me to cook when I’m not scrambling for ingredients and measuring as I go. I like to have everything ready. But that’s just my preference. If you are a measure-as-you-cook kind of person, there will be a lot less dishes for you!
Also, I have noticed that for ground turkey, you can really only find a 1.25-pound package — this recipe calls for a 1-pound package. The only problem with this is that you have to kind of play with the amounts of the spices to get them right. I haven’t gotten it perfect yet, and the measurements in the recipe I am about to post aren’t complete with the extra amounts of spices you need. Just cook your meat with the spices, taste, and season as you like with what you like. I usually use more cumin (I love cumin), more salt, and more pepper; sometimes I’ll throw in a bit more Worcestershire sauce, too. Just think of it as an adventure!

Healthy Tacos

Serves: 4
INGREDIENTS
1 pound lean ground turkey
2 teaspoons chili powder
2 teaspoons ground cumin
1 teaspoon garlic salt
1 teaspoon black pepper
1 teaspoon paprika
1 teaspoon Worcestershire sauce
1/2 teaspoon Tabasco sauce
1/2 teaspoon Dijon mustard
1/4 teaspoon cayenne pepper
4 whole wheat tortillas (we used regular tortillas — I have a fiance who is kind of picky about bread, haha!)
Any toppings you would like!
Directions:
1. Spray a nonstick skillet with cooking spray and put over medium heat. Crumble the ground turkey into the pan. Add the next nine ingredients and cook, stirring and breaking up the meat with a wooden spoon or spatula, until the meat is browned. Set aside.
2. Wrap the tortillas in a towel and heat in the microwave for 15 to 30 seconds. To serve, put the meat, tortillas, and toppings on serving plates. Everyone can make their own taco. Love, M
